This is meant to be their main aged rum for mixing and cocktails, but sipping it wouldn’t be frowned upon either. Bottled at 40% ABV free of sweeteners – the label sports the Scarlet Macaw, same as the Martin Doorly’s Macaw Rum bottling.

The Foursquare Distillery occupies the site of a former sugar factory that dates back to 1636 and, as one of the most modern and efficient rum distilleries in the world, is designed to be both highly energy efficient and environmentally friendly. Taste - I know what other reviewers mean about the Banana, and a couple of drops of water bring it out even more, and further sweetness if that's how you prefer your Rum! Although Doorly's rum is rarely referred to as Doorly Macaw Rum anymore, its bottles and packaging still tend to feature the Neotropical parrots, and the image is still a traditional and recognisable trademark of the brand. Aged for a minimum of 3 years in American oak before charcoal filtration to give the final 'white spirit'.

Doorly’s Rum has been made on the island of Barbados since 1920, and was the first rum brand ever exported from the island. Then a two-step fermentation process which is computer temperature controlled is adopted in the production of Doorly's rum.Foursquare Distillery is always praised for its Exceptional Cask Selection limited releases, but sometimes it overshadows their main continuous brand, Doorly’s.

I usually drink whisk(e)y and bourbon, and the first thing I noticed is that it's got a pretty strong bourbon flavour profile to it. It all started in 1906 when the Rum Duty Act changed the way the rum was sold and distributed across Barbados as the distilleries had to have a license and were required to sell rum only in bulk quantities of 45 or more litres at a time.Patiently matured over 14 years within ex-bourbon casks, this creation reaches new heights of flavour.
